All that fruitfulness turned to remedies for winter

Our garden is laden with fruits and berries. Tradition demands that any gardener or herbalist is frantically busy in the autumn gathering in all and sundry to turn into preserves and medicines for the coming winter - to prevent illness, or soothe encumbered bodies, or simply to enjoy the fruits of the territory.  Frankly, it's simple stuff to make, not Heston Blummenthal, believe me.  Easy, forgiving and truly excellent.

Here at Great Elm, the peach tree had a branch so laden that it snapped one windy night, and I had to do something fairly quickly with several kilos of unripe peaches.  Actually it turned out to be the most glorious jam - with a bit of cardamom and a dash of cider vinegar.

And now the elderberries (both in our garden and the hedgerows hereabouts) are so ripe they are beginning to shrivel - so I've picked a load.  And now I'm going to embark on the best anti-flu mixture ever. Last winter, as soon as the first inkling of cold of flu came our way, each and every member of the family dosed up on elderberry syrup.
